Ingredients

  • 1 1/4 lbs (700g) medium raw sprawn, peeled and deveine
  • 1 1/4 lbs (700g) asparagus (1 small bunch) rinsed and trimmed
  • 1 tablespoons butter
  • 1 tablespoon olive oil
  • 6 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoons onion powder
  • Salt and fresh cracked pepper, pinch
  • 0.50 cup (60ml) vegetable stock
  • Crushed chili pepper flakes, optional
  • Juice of 1/4 lemon
  • Fresh chopped parsley or cilantro, for garnish

Method

  1. In a large skillet over medium heat, drizzle oil and add butter.
  2. Once butter is melted, add asparagus, then prawn.
  3. Season generously with salt and pepper, spice and dried herbs, and cook, stirring occasionally, until asparagus is fork-tender
  4. Stir in garlic for 1 minute or so until fragrant
  5. Sprinkle garnish with parsley, lemon slices, and red crushed chili pepper over everything and serve immediately.
